I cannot imagine corned beef without this sharp, sweet mustard sauce. It was always a real treat when mum made it.

Quantity: 200 ml (3/4 cup)

  • 1/4 cup cooking water from corned beef/silverside
  • 1/4 cup white vinegar
  • 1 tbsp mustard powder
  • 1 egg
  • 1 tbsp sugar
  1. Mix eggs, mustard and sugar together in a small pan.
  2. Add the vinegar and beef cooking water.
  3. Heat gently without boiling.
  • When done the sauce should coat the back of a spoon.
  • If it boils, the sauce will curdle.
