
Our son's then beautiful girlfriend, now beautiful wife, Olivia, introduced us to this dip at her little boy, Samual's 5th birthday party. I couldn't stop eating it, it is amazing, delicious and even better, it is so simple to make!
- 2 ripe avocados
- juice of ½ lemon
- 2 roma tomatoes
- tobasco sauce to taste
- ¼ continental cucumber
- ¼ red onion
- juice of 1 lime
- sea salt and freshly ground black pepper to taste
- sugar to taste
- ¼ packet of taco seasoning
- 200 ml sour cream
- 1 packet of corn chips

Mash the avocado, add the juice of half a lemon and season to taste with sea salt and freshly ground black pepper.

Finely dice the tomatoes, cucumber and red onion, season with sea salt, freshly ground black pepper. Add the lime juice, and season to taste with a little sugar.

Spread the avocado into the base of a large shallow serving bowl.

Sprinkle over ½ of the taco seasoning.

Drain the liquid from the tomato mix and then scatter ¼ of the mix over the avocado.

Spread over the sour cream.

Sprinkle over the remaining taco seasoning.

Scatter the remaining diced tomato mix over the top.

Surround with corn chips and serve.
