Caramelised Apple Tart

Ingredients
  • 500 g sweet short crust pastry (see link below for gluten free pastry recipe)
  • 1.25 kg eating apples, such as royal gala (peeled weight)
  • 1 lemon juice only
  • 60 g butter
  • 75 g brown sugar
  • 1/2 tsp cinnamon
Instructions
  1. Lightly grease a 25 cm loose-based, tart tin.

  2. Preheat oven to 175˚ C.

  3. Roll out pastry between sheets of baking paper until large enough to fit the tart tin.

  4. Lift the pastry into the tin and press into the sides.

  5. Trim the edges, cover and place in the refrigerator to chill for 20 minutes.

  6. Line the pastry case with baking paper, cover with baking beans and blind bake for 10 minutes.
  7. Remove beans and cook for a further 5 minutes, ensuring that the crust does not colour.
  8. Remove from the oven and allow to cool.
  9. Peel and core the apples, then cut them into eighths. Sprinkle generously with lemon juice.
  10. In a large frying pay, melt the butter with the sugar and cinnamon, over medium heat, stirring ocassionally. Cook for 5 minutes and then add the apple to the pan.
  11. Simmer over a medium heat for 20-25 minutes until the apples are tender and coloured.
  12. Remove the pan from the heat and allow the apple to cool, slightly.
  13. Preheat oven to 180˚C.
  14. Arrange the apples into the baked tart shell and bake for 25 minutes.
  15. Serve warm with cream, crème fraîche or ice-cream.
