Rosolli – Finnish Christmas Salad

I found the original recipe for this dish when searching for an alternative salad that showcased beetroot.  I love the simplicity of this salad, and we were a little surprised when it was served as part of a session showcasing Christmas dishes from around the world, that it proved to be an excellent accompaniment for a Eurasion Christmas curry – who would have thought!  It is a fabulous salad for a buffet, or just to serve as a side to cold cooked meats.

Rosolli (Finnish Christmas Salad)
The Finnish word for Christmas table is “Joulupöytä” (Joulu: Christmas, pöytä: table). Rosolli salad is a very colourful and easy part of traditional joulupöytä.

Ingredients
  • 1 large or 2 small potatoes, peeled and cut into cubes
  • 1 carrots, peeled and cut into cubes
  • 2 beetroot, peeled and cut into cubes
  • 1/2 red onion, finely diced
  • 1 red apple, cored, peeled and diced
  • 1-2 dill pickled cucumbers, cut into small dice
Sauce:
  • 125 ml pure cream
  • 1 tbsp apple cider vinegar
  • 1 tsp sugar
  • 1/2 tsp salt
  • White pepper to taste
Instructions
  1. Add about 2-3 cups of water to a saucepan. Add the diced potato and cook until tender - do not over cook.
  2. Drain the potatoes in a colander or sieve. Save the water and return the water to the saucepan.
  3. Add the carrots to the water in the saucepan and boil until tender, but not too soft/mushy.
  4. Drain the carrots in a colander. Save the water and return the water to the saucepan.
  5. Add diced beetroot to the water in the saucepan and boil until tender, but not too soft.
  6. Drain the beetroot into a colander. (You can save the liquid for soups, stews, sauces. etc. Or cool it and use it for plants.)
  7. While the vegetables are cooling whisk the cream. Add vinegar, sugar, salt and pepper to the cream, and whisk a little more, until slightly thickened (you don't want it too thick).
  8. Put all the salad ingredients in a bowl and mix.
  9. Refrigerate to chill.
  10. Serve on a platter or in a bowl.
