Orange Cordial

 

Orange Cordial

A simple, refreshing cordial - wonderful with sparkling water.
Quantity: 1 litres (approx)

Ingredients
  • 8 large oranges
  • 750 g sugar
  • 750 ml water
  • 2 tsp citric acid
Instructions
  1. Wash the oranges.
  2. Using a potato peeler or paring knife, thinly pare the zest from 4 of the oranges.
  3. Squeeze the juice from all the fruit and strain to remove any pips or flesh, and set aside/reserve.
  4. Place zest, sugar and water into a large saucepan.
  5. Bring to the boil over a medium heat, stirring until the sugar dissolves.
  6. Reduce heat and simmer for 5 minutes. Set aside to cool and allow the zest to infuse the water.
  7. Using a sieve, strain the liquid into a clean pan.  Discard the zest.
  8. Bring the syrup back to the boil and simmer for five minutes.

  9. Remove from heat and stir in the reserved orange juice and citric acid.

  10. Pour into warm sterilized bottles and seal.
  11. Refrigerate for up to 3 months.
Notes
  • One orange should yield between 100 ml to 125 ml of orange juice.  For this recipe you will need 750 ml of orange juice.
  • For long term storage water bath for 10 minutes. Remove, cool, label and store in a cool dark space for up to 12 months.

      Many thanks for the feedback, I truly appreciate it. I have just spent some time updating the recipe with more complete and detailed list of ingredients and instructions. I hope that it will be more user friendly with these changes.

  2. Recipe incomplete! I presume if you use, for example, 3 cups of orange juice, you use 3 cups of sugar. It also says to add reserved orange juice, doesn’t tell you to reserve any juice.
