Chocolate Chip Biscuits (Gluten Free)

These choc chip biscuits/cookies are on regular rotation in our kitchen.  They are baked in various flavours (will share other recipes over time), and are a great hit in any hamper that I prepare for family and friends.  They are gluten free, but who would know!

Chocolate Chip Biscuits (GF)

Easy to make and easy to eat!

Ingredients
  • 125 g butter
  • 75 g brown sugar
  • 100 g white sugar
  • 1 egg
  • 1 egg white
  • 360 g gluten free flour blend (see notes)
  • ½ tsp salt
  • ½ tsp vanilla
  • 125 g dark chocolate chips
  • 125 g walnuts, roughly chopped
  • 2 tsp baking powder, gluten free
Instructions
  1. Preheat oven to 170˚.
  2. Cream butter, sugars and vanilla.
  3. Add lightly beaten egg and egg white and beat well.
  4. Mix in flour and salt and mix well.
  5. Add chocolate chips and chopped walnuts and mix well.
  6. Shape teaspoonfuls of mixture into small balls and place on baking tray lined with baking paper.
  7. Bake 20 minutes until lightly golden.
  8. Cool on wire rack.
  9. Store in an airtight jar or container.
Notes

If you're pushed for time, roll the dough into logs about 2.5 cm thick, then cut into 1 cm thick rounds and place on prepared baking tray.

We like our biscuits crisp, not chewy, so once they are all baked,  I often reduce the heat of the oven to 70˚C, and then place them back in the oven for another hour.
