I've been making fish patties for longer than I care to remember, and they have always been a true family favourite! The recipe has evolved over the years, as I become more relaxed and just used what I had on hand, hence the list of options for fish and for coating - even how I cook them!
Add a splash of olive oil to a hot pan and sauté the onion and celery with a pinch of salt, until the onion is soft and translucent.
Form into 8 patties, at least 2 to 3 cm / 1 inch thick, and coat each patty in your preferred coating (see notes below).
Place patties on a plate and in refrigerate until chilled and firm. (Can be frozen at this stage)
Heat a little butter and olive oil in a fry pan over medium heat, and pan fry patties on both sides until golden brown (4 to 5 minutes each side).
Fish Suggestions
🥄White fish, poached in some water, white wine, salt, pepper & herbs,
🥄Canned salmon or tuna.
🥄Packaged smoked salmon, or trout.
🥄A combination of poached fish and smoked fish.
🥄Tuna, fried bacon bit and finely chopped silverbeet is delicious!
Coating options:
🥄Plain flour/gluten free flour
🥄Breadcrumbs - fresh or dry
🥄Egg, flour and breadcrumbs
🥄Dukkah... (mabe serve with middle eastern style veg dish, or simple cos or iceberg salad)
🥄Crushed corn chips… (try baking in the oven and for the last few minutes, sprinkle with some grated cheese and serve with guacamole, salsa and simple cos or iceberg salad)
Freezing:
🥄To freeze, lay on a flat tray or in a flat container and freeze. When frozen the patties can be stored in a plastic bag or in layers, separated by a sheet of baking paper, in a container.
Cooking alternative:
🥄Can be baked in the oven at 200˚C/400˚F - Lay patties on a baking tray lined with baking paper and drizzle with a little olive oil, when top is golden, turn, drizzle the other side with a little olive oil, and continue to cook until golden and crisp.
🥄Can be baked in the oven from frozen.
